Shrimp & Kielbasa with Alfredo Sauce

I love shrimp.  If I had my choice our protein of choice would be shrimp or just seafood in general.  But it isn't always the frugal option.  However, sometimes I just get the hankering for some yummy seafood.  But to make it more cost effective I like to add it to an inexpensive carb, like rice or pasta.  This yummy Shrimp and Kielbasa Pasta dish is inspired by those delicious crab and shrimp boils, but is less expensive and a bit more family friendly.

I really love the combination of shrimp and kielbasa.  They pair really nicely together.  Plus, you can usually find an inexpensive kielbasa at your local grocery store.  I often will purchase mine at Costco where you can get several in a package.  This way I have it for several different meals like our Baked Ziti or with yummy Zoodles.

I also love this shrimp and kielbasa dish because it can be paired with fresh veggies from each season.  Add zucchini through the summer and fresh tomatoes, or have broccoli and cauliflower through the colder months.  No matter the veggies you choose, it will be a super delicious meal.

Just a few tips for this yummy dish.  Make sure your noodles are al dente or you'll not enjoy the textures.  Since neither the shrimp or kielbasa are crisp, your noodles need to be firm.  Also, if your alfredo sauce seems to thick, just add a bit more liquid to thin it out.  It is better as a pour-able sauce.  Finally, cook your vegetables so they are crisp not soggy.  You'll enjoy the bit of crunch.

Shrimp and Kielbasa Penne

Delicious combination of shrimp, kielbasa and yummy pasta in a fresh Alfredo sauce.

ingredients:


  • 1 1/2 lbs shrimp, deveined
  • 1  medium Zucchini
  • 12 oz kielbasa
  • 4 cups penne pasta
  • 1 Tbsp Old Bay Seasoning
  • 1/4 c butter
Alfredo Sauce
  • 2 Tbsp flour
  • 1/2 c. butter
  • 2 c. milk
  • 2 cloves garlic
  • 1/4 c. Parmesan cheese

instructions


  1. Cover pasta in water and cook on the stovetop until tender.
  2. Chop the zucchini and kielbasa into bite size pieces.
  3. Saute kielbasa in butter until brown.
  4. Saute zucchini in drippings from the sausage.
  5. Cook shrimp in remaining drippings and sprinkle with old bay seasoning.
  6. Layer plate with pasta, alfredo sauce, zucchini and meats.  Enjoy!
Alfredo Sauce
  1. In a small saucepan, place flour and butter.  Mix over low heat until butter is melted and flour is mixed well.
  2. Add milk and garlic to flour and butter mixture.  Whisk.  Continue cooking until the mixture thickens up.
  3. Add cheese to thick mixture and whisk until melted.
