Finally, I head to the freezer section of my local Walmart and I make sure to pick up one of the Michael Angelo's Family Size Entrees for an easy and relaxing meal after a busy day.  Micheal Angelo's meals are inspired by Italian traditions and are made with wholesome, simple ingredients that you can pronounce and are full of flavor.   With those yummy homemade tastes, it makes planning, preparing and serving a meal so easy because I know my kids will love the taste and ask for seconds!

Once home I simply pop my Cheesy Pizza Pasta in the oven and whip up a side dish of my roasted broccoli and cauliflower with Parmesan and slice some french bread.  For an easy, family-favorite meal in minutes!!  Plus, with no artificial preservatives, flavors or colors, I'm not compromising our healthy lifestyle.

While my Michael Angelo's Family Size Cheesy Pizza Pasta in baking in the oven, I throw together this quick vegetable side dish.  I love how easy roasting vegetables can be, but more than that, I love that it is a healthy side dish that my family enjoys.  We call broccoli "little trees" at our house.  It is one way we've gotten our children to try eating broccoli and cauliflower.  Works like a charm!

Start by wash your broccoli and cauliflower in cold water.  Than dry it off or let it sit and dry for a few minutes.

Next, chop your broccoli and cauliflower into bite sized florets.  Try and make them each the same general size.  That way when you cook them they all cook evenly and quickly.  Add these to a large bowl.

Next, dice your garlic cloves and add them to your vegetable mix.

Melt your coconut oil in the microwave for about 30 seconds.  Pour it over the top of your vegetable mixture and toss with a spoon.

Combine your salt, pepper and onion powder and pour over the top of your vegetables.  Toss again with a spoon.

Finally, grate Parmesan cheese and sprinkle over the top of your vegetables.

Place the vegetable mixture onto a foil lined baking pan.  Spread vegetables out evenly on the pan.  Finally, pop those yummy vegetables in the oven for 10-12 minutes at 425°.

Make sure you watch your vegetables while they cook.  You might need to roast them a little longer if they aren't tender.  You just don't want them to be crunchy.  You want tender vegetables to eat with your yummy Michael Angelo's Family Size Cheesy Pizza Pasta.

Roasted Broccoli and Cauliflower with Parmesan

Delicious roasted broccoli and cauliflower make a great side dish to any weeknight meal.
prep time: 10 minscook time: 12 minstotal time: 22 mins

ingredients:


  • 2  c. broccoli, florets
  • 2 c. cauliflower, florets
  • 2 Tbsp Coconut Oil
  • 3 garlic cloves
  • 1/4 c. parmesan
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper
  • 1/4 tsp onion powder

instructions


  1. Preheat oven to 425°.
  2. Chop broccoli and cauliflower into single florets.  Add to a large bowl.
  3. Melt coconut oil in the microwave.  Pour over broccoli and cauliflower.
  4. Chop garlic cloves.  Add garlic, salt, pepper and onion powder to bowl.  Mix all ingredients well.
  5. Shred fresh Parmesan over your vegetables.   
  6. Spread vegetables over foil covered sheet cake pan.  Bake for 10-12 minutes.
