Around our house, breakfast is the favorite meal of the day. Which is honestly a little weird because I've never really like breakfast. In fact, I skipped it for most of my high school years. Even now I don't love a huge breakfast unless it is late in the morning. But I am outnumbered in my house.
That means, I get to learn to make fun, nutritious and yummy breakfasts for my family. Often that means eggs and bacon (my husband's favorite). But if I'm going to eat breakfast, I like something sweet. Which is how I came up with this yummy cream cheese stuffed french toast recipe.
I became familiar with cream cheese stuffed french toast when my husband and I were first married (over 10 years ago). We went to lunch a little diner that had a great breakfast menu. On the menu was a yummy stuffed french toast recipe. It was delicious!! It had a nice thick bread, crisp outside and gooey inside. I just knew I had to make the recipe myself. So I did.
Combine the cream cheese, cream and cinnamon in a bowl and mix until it is really smooth. The smoother the better. You'll spread this right onto the bread and make it a sandwich.
Next, I'd make the raspberry sauce. That way it has a chance to really become juicy with the sugar. You could almost eat this all by itself.
One final tip, cook your cream cheese stuffed french toast on a medium to low heat. Low and slow is better for the crispness of the toast and to help melt that gooey inside.

Stuffed French Toast with Raspberry Sauce

ingredients:
- 1 loaf of bread
- 8 oz cream cheese
- 2 tsp cinnamon
- 1/2 c. cream
- 3 eggs
- 1/2 c. milk
- 1 tsp nutmeg
- 1 tsp vanilla
- 1 c. raspberries, fresh
- 1/4 c. sugar
instructions:
French Toast
- Combine cream cheese, cream and cinnamon in a bowl. Mix until creamy and spreadable.
- Spread a dollop of the cream cheese mixture onto a slice of bread. Sandwich the second slice of bread to the cream cheese side. Repeat until all the cream cheese mixture is gone.
- Preheat skillet to medium heat.
- In bowl, combine egg, milk, nutmeg and vanilla. Mix well.
- Dip sandwich into the egg mixture and place on greased skillet until brown. Make sure to flip the sandwich half way through to brown both sides.
- Serve warm and top with raspberry sauce.
Raspberry Sauce
- Combine raspberries and sugar in a bowl. Mash the raspberries with a fork. Allow mixture to sit for 10-15 minutes before serving.
