The heat
of summer and the crisp air of fall always bring back memories of my
childhood. Hot nights spent outside
playing with my siblings and cool fall days enjoying nature. One of my favorite pastimes is camping with
my family in the summer and early fall.
We’d pack up to get out of the Arizona heat and head up to the
mountains. We’d spend a week or weekend
playing in water, roasting marshmallows by the fire and getting so dirty you
weren’t entirely sure we were kids and not wild animals.

Just the
smell of those yummy marshmallows makes my mouth water. This summer we aren’t able to take a trip to
the mountains, so no marshmallows or s’mores to enjoy. But one day as I was walking down the aisle
of my local grocery store, I found these yummy Hershery S’more pieces. That got my brain working and wondering what
yummy treat I could come up with.
I’ve
always loved baking cookies, so of course a cookie was my first thought. But seeing as I wanted to feed a large group
of family members, I decided a s’more cookie bar would be faster and perfect
for feeding a lot of people. Plus, if
you really love s’mores, you could add a layer of marshmallows on top at the
end and broil them for the perfect s’more snack.
I used my
favorite cookie dough for this recipe.
This dough I’ve been using for years and it is so tasty and works with
chocolate chips, peanut butter chips or chocolate coated candies. So I knew it would be great for this S’more
Cookie Bar recipe.
To top
of these yummy s'more cookie bars, I melted some chocolate chips and drizzled them over the
top. Because let’s face it, you can
never have too much chocolate.

S'more Cookie Bars

ingredients:
- 1 1/2 c. sugar
- 3/4 c. brown sugar
- 1 1/2 c. shortening
- 1/4 c. almond butter
- 2 eggs
- 3 Tbsp. vanilla
- 3 1/2 c. flour
- 1 1/2 tsp baking soda
- 1 1/2 tsp. salt
- 1 Pkg Hershey's S'Mores Pieces
instructions
- Combine sugar, brown sugar, shortening and almond butter in a large mixing bowl. Cream until smooth.
- Add eggs and vanilla.
- In a separate bowl, combine flour, baking soda and salt. Mix well.
- Slowly add flour mixture to creamed mixture until mixture is crumbly.
- Stir in Hershey's S'more pieces.
- Line a baking sheet with parchment paper or silicone baking mat. Carefully pour the entire mixture onto the baking sheet. Press mixture into corners making sure the entire sheet is evenly distributed.
- Bake at 375° for 30-35 minutes or until golden brown around the edges and firm in the center. Allow to cool slightly before removing from pan.
